A Busy Saturday Breakfast


After a stressful work week I look forward to weekends where I get to wake up with my family and not worry about the hectic mornings where we are jamming out of the door for our daily routine. Weekend breakfasts are kind of my thing, I enjoy cooking for my family and when we actually get to sit down together at the same time to eat it's pretty great. Other than my regular job I also have a side cake/cupcake business that in the past couple years has been pretty consistent.  This past Saturday I was swamped with  Birthday cupcakes and a Wedding cake, so I had to improvise.
As much as I love a home made waffle there simply wasn't enough time so, I opted for the next best thing..Eggo waffles. Who doesn't like Eggo waffles,one thing I know is my kids like them and I add an extra touch to add that home style taste!  
Sausage,Eggs & Waffles
Ingredients:
Farmer Johns sausage (or whatever brand you prefer)
6 Eggs
Salt & Pepper
Eggo waffles( I used 5 waffles)
2 Bananas sliced (or any fresh fruit you prefer)
Agave Nectar (or your favorite syrup)
First I start the sausage,simply because they take the most time to cook. Tip: place raw sausage in baking dish and bake at 400° for 10 mins then check sausage rotate and bake until cooked though. This trick comes in handy when you are cooking multiple breakfast items and have hungry bellies that just cant wait.
Next is the Eggs. I just crack  them whole in the pan, no need to dirty an extra dish right? It also helps to let the eggs sit and cook for a minute then fold the eggs together rather then scrambling they should just call them "folded eggs" haha
Tip: Add about 1/4 cup of water to your eggs  before scrambling , it slows down to cooking process making a fluffier egg. 
Heat up your waffles how ever you choose either in the toaster or all at once in the oven. I just popped them in the oven since it was already preheated, pre slice the waffles add bananas on top and Bam! done.

Recipe- Roasted chicken & vegetables


Between working a full time job, commuting back and forth to work, daycare and home my day can be stressful. In a generation of fast fixin' and processed foods sometimes i'll admit  I just want to pick up a pizza and call it a day. Then my conscious kicks in, I feel guilty because I know i'm being lazy and my my kids do deserve a home cooked meal. Home cooked meals are hard to come by these days, in some house holds "home cooked meal" isn't even in the vocabulary. Growing up my dad cooked dinner for us everyday.I mean we did indulge in the naughty things but at least 5 meals a week were prepared by him. I'm not saying every house hold should have a 5 course meal everyday but there is always time for something quick, simple and satisfying. Enjoy! 
Roasted Chicken & Vegetables
Ingredients: 
1 pack of chicken drumsticks
4 red potatoes
1/2 sliced yellow onion
1 bundle of fresh green beans
2 handfuls of baby carrots
Rosemary
Season all
olive oil
After preheating the oven to 400°(f) 
Peel and chop potatoes,slice the yellow onion mix with the carrots and green beans.Season the vegetables with season all, lightly drizzle with olive oil and hand toss until everything is coded. Cover glass dish with tin foil and bake covered for 45 mins or until potatoes are soft.
Rinse of Drumsticks off with cold water,shake off excess water and place in bowl. Season Drumsticks with season all,rosemary(I added lemon pepper and garlic powder for more flavor)
Drizzle chicken with a little bit of Olive oil and hand toss until evenly coated. Place Chicken evenly in dish  and cover with tin foil. Bake covered for 45 mins then uncover and continue to bake for 15 minutes to get that crispy skin.
Voila! there you have it,a simple,easy and healthy dinner in an hour!

Chicken Gravy
Ingredients:
Drippings from the chicken
2 tbs of flour
1 1/2 cups of water or chicken broth
salt and pepper (if needed)

1.Add chicken drippings in a pot and heat on the stove
2.Add flour and whisk continuously (creating a roux)
3. Add water or broth and whisk whisk whisk!
4.bring to a boil then reduce to medium heat
5. Add salt and pepper to taste
